Hakka delicacies
Flat rice noodles
Ban, which is made by grinding rice with water into a pulp that is then steamed, when cut into strips, becomes flat rice noodles. Stir-fried flat rice noodles are made with fried shallots and pork strips. Flat rice noodles in soup are made with broth and chives. They are both delicious Hakka dishes.
Whole cabbage stew
This is a classic Hakka dish from Meinong with a simple recipe. Stew a whole cabbage with pork, and season it with soy sauce, sugar, and rice wine. The soft cabbage that soaked up all the meat juice will melt in your mouth.
Chicken soup with pickled radish
Pickled white Jade radish from Meinong might be unimpressive in its looks but its nutritional value is very high! Cooking a chicken soup with pickled radish will give it a sweet and smooth taste that warms your heart.
Crested floating heart
Crested floating heart is a vegetable also known as “white water snowflake.” Deep-fried crested floating heart is aromatic and crispy, and the freshness of the vegetable neutralizes the greasiness of fried food. Stir-fried crested floating heart is crisp and refreshing. Seasoning it with fermented soybean paste with pineapple instead of salt is the true Meinong way of making this Hakka dish.
