Hakka delicacies
Flat rice noodles
Ban, which is made by grinding rice with water into a pulp that is then steamed, when cut into strips, becomes flat rice noodles. Stir-fried flat rice noodles are made with fried shallots and pork strips. Flat rice noodles in soup are made with broth and chives. They are both delicious Hakka dishes.
Stir-fried chitlins with ginger
This dish is made by stir-frying pig intestines, green onion, ginger, garlic, and pickled mustard leaf in a hot pan. A bite of the chewy intestine with ginger is tart, refreshing, and mouthwatering!
Pork head
The pork head in Hakka cuisine refers to the meat that connects the skull that you get after removing the scalp. It is rich in fat, fascia, and cartilage, perfect as a luwei (Taiwanese braised dish), or made into a soup or noodle dish. The meat is bouncy and delicious.
